  2. Mix Dry Ingredients – In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. Mix Wet Ingredients – In a large bowl, whisk together mashed bananas, blended cottage cheese, eggs, honey, melted coconut oil, and vanilla extract until well combined.
  4. Combine Wet & Dry – Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Do not overmix.
  5. Fold in Add-ins – If using nuts, chocolate chips, or seeds, gently fold them into the batter.
  6. Bake – Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool & Serve – Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • For a gluten-free version, substitute whole wheat flour with oat flour or gluten-free all-purpose flour.
