- 1 teaspoon coconut oil (optional, for smoothness)
Instructions
1️⃣ Bake the Cake:
- Preheat oven to 350°F (175°C) and grease two 9-inch cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Mix until smooth.
- Gradually add boiling water while mixing (batter will be thin).
- Divide batter into pans and bake for 30-35 minutes. Let cool.
2️⃣ Prepare the Strawberry Filling:
- In a saucepan over medium heat, cook strawberries and sugar until softened.
- Mix cornstarch and water, then stir into the strawberries. Cook until thickened.
- Add lemon juice, remove from heat, and let cool.
3️⃣ Make the Chocolate Ganache:
- Heat heavy cream until hot but not boiling. Pour over chopped chocolate and stir until smooth.
4️⃣ Dip the Strawberries:
- Melt chocolate in a microwave or double boiler. Stir in coconut oil for extra shine.
- Dip each strawberry and place on parchment paper to set.
5️⃣ Assemble the Cake:
- Place one cake layer on a serving plate. Spread strawberry filling evenly.
- Add the second cake layer and pour ganache over the top.
- Arrange chocolate-covered strawberries on top for decoration.
