  • 1½ cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • 1 tbsp cornstarch (optional, for thickening)

Optional Add-Ins

  • ½ cup mushrooms, sliced
  • ½ tsp red pepper flakes (for a spicy kick)
  • 1½ cups cooked pasta (for a heartier soup)

Instructions

  1. Sauté the Aromatics

    • Heat butter and olive oil in a large pot over medium heat.
    • Add diced onions and garlic, cooking until soft and fragrant (about 3 minutes).

    • Sauté until the chicken is lightly browned (about 5 minutes).
  3. Simmer the Soup

    • Stir in the chopped spinach and cook until wilted.
    • Pour in heavy cream and mix well.
  5. Finish with Cheese & Adjust Consistency

    • Stir in Parmesan cheese until melted.

  6. Serve & Enjoy

    • Ladle the soup into bowls and garnish with extra Parmesan cheese.
    • Serve with crusty bread or garlic toast.
